WINEMAKING

The fruit was fermented in temperature- controlled stainless steel tanks. After maceration, wine was barreled in all new French oak for 19 months. Following our winemaking philosophy of minimal intervention, the process was allowed to follow its natural course, yet always under meticulous scrutiny to avoid any flaws. The wine shows the natural evolution of the vines and the terroir.
TASTING NOTES

An elegant, balanced, old-world style Cabernet. Aromas and flavors are of intense raspberry fruit with, cedar, mint, blueberry and spice. The wine is well structured, with a remarkable finish. Tannins are ripe and well integrated.

"Brilliant ruby red hue. Cassis, mace, iodine and earth aromas. Medium-full with good concentration, this has tightly compacted fruit, youthful tannins, well-integrated oak and a strong herbal character. This is a bit of an extreme style and not for everyone, but it is quite distinct and well made. Drink now until 2008."
