Pretty Sally Estate was established in 1996 with a single mission: to produce world class wines that over-deliver. Our
commitment to excellence begins in the vineyard, as only exceptional grapes can produce great wines. Our focus is on detailed vineyard management coupled with expert winemaking. We make single-vineyard wines from our Shiraz, Cabernet Sauvignon and Sauvignon Blanc.
The location of our vineyard was selected for its ideal soil and climatic conditions. It is located 40 miles north of Melbourne in Central Victoria - one of Australia's original viticultural area. This is an elevated, maritime influenced, cool climate region - cool enough for a long growing season and warm enough for full ripening. The vines benefit from rolling hills, morning fog, cool afternoon breezes, extended brilliant sun, and uniquely Australian ground. The soil has rocky fragments in sandy clay loam with subtle mineral layers. The vineyard borders the famous Pretty Sally Hill, which looks across the Great Dividing Range.
In the vineyard our constant focus is to grow exceptional fruit; fruit that can result in complex, concentrated, true-to-type wines. We have selected the optimum location, soil preparation, planting density, trellis systems and varietals. We prune aggressively to an average yield of under 3 tons per acre. The result is superb, concentrated, delicious fruit -- and wine.
Our winemaking philosophy is one of minimal intervention, enabling the process to follow its natural course. The unique characteristics of the fruit are allowed to express themselves in the final product. John Ellis, our winemaker, insists that the flavors be in the fruit in the first place. Nothing is added to affect flavors other than traditional fermentation and oak aging techniques.
Our wines are vinted to the highest standards with state-of-the-art technology, allowing us to rigorously analyze, control and attend to every detail. The Cabernet Sauvignon is aged in all-new French oak barrels for an average period of 20 months. The CabShiraz blend is oaked in primarily French barrels. The Shiraz is oaked in all-new French and American barrels for approximately 18 months. The Sauvignon Blanc and Rosé are vinted without oak to allow the fruit to attain its purest and fullest expression.
